    knowing as she does
    a great deal about the way a company operates, it is no surprise...

    what does the blue part mean?

    1. Knowing, as she does, a great deal about X...

    This means "Given that she knows a great deal about X..."

    With "as she does", the speaker vouches for the fact that "she knows a great deal about X". It may also imply that this expertise of hers will be known to the reader too.
