    would have died

    The local peasants gave the soldiers clothes and food without which they would have died of cold and hunger.

    Is "would have died without them" the past perfect tense or present perfect tense?

    Right. It's a type 3 conditional, a past conditional:

    If the local peasants hadn't (have) given the soldiers clothes and food, they would have died of cold and hunger.
