    We can understand this sentence part by part.
    Firstly, "to turn oneself into" is to change oneself. In this case the sentence isn't used literally, because this product cannot change itself, instead, we can understand it as "It has been turned into".

    Secondly "a play on" here means "a variation of".

    So the sentence means "Since then, it has changed into a variation of Linux."

    Here "IT" refers to a company which, I guess, is doing business with Linux.
