The Veg-O-Matic is a kitchen device used to chop and slice raw vegetables. It used to be sold mainly via TV informercials, and was the subject of many parodies. To suggest that someone is "going Veg-O-Matic" would more properly describe them as going crazy with a knife and slashing everything in sight (in my opinion). I think the writer was trying to be clever in using a different way of describing a comatose person as a vegetable, but it really doesn't convey the proper image in this case.
