    Default to seeing

My student asked me if it is appropriate to have the phrase "to seeing" because she received an invitation that says "We are looking forward to seeing you on our product launching."

    Please help me.

Yes, this is not an infinitive.
We are looking forward to + ing.
    In the same vein:
She objects to being treated like a child.

So what do you call that so I could explain it clearly to my students.

    Thanks

It's because 'to' here is a preposition and not an infinitive marker.

In addition, try moving the sentence elements around

Seeing you is what we are looking forward to.

If 'to' were an infinitive marker, we wouldn't be able to separate it from its verb, but since we can separate 'to' from 'seeing', we know that 'seeing' is not functioning as a verb. It's a gerund, a verbal noun. A preposition takes a noun as its object. :D
