    I am looking forward......

    I presume that: I look forward to hearing from you, is very formal and sounds like: I expect a quick answer.

    I want to say in a polite way: I’m looking forward to seeing you, in a formal letter to my boss, but I want it to sound polite, not like: remember about the meeting, and do not be late! Can I still say : I’m looking forward to seeing you? Or maybe should I add something?

    I look forward to hearing from you does not necessarily mean I expect a quick answer. It is merely a formal way of saying your letter requires an answer.

    When you use the -ing form (I'm looking forward to seeing you) it is less formal.

    So your choice would have to depend on (a) whether the meeting is a work meeting or, say, an informal lunch date, (b) how friendly and relaxed you feel with your boss.

    An alternative might be to say something like, "I hope you can come."

    It will be a formal work meeting, face to face, to discuss important work related issues. I will go for: I hope you can come, then, sounds polite.
