    can I say rifling the e-mails instead of checking an email.

    If you rifle something, you take something with you. No, you can't use that word in regards to e-mails. At least, I have never heard that one before.
    You were checking/checking out your e-mails, breezing through your e-mails, running through my e-mails and stuff like that.
