difference between once and everyday/everytime

What is the difference between?

I will do this when he sleep and I will do this when he sleeps?

Please help me in understanding this.

You'd need to say '...when he sleeps'.

We usually say 'I will do this when he's asleep'.

Once or every day has nothing to do with it.

But then if I have to say goes instead of sleep. I mean any other verb(eg. plays, reads etc)

Like in this case, can I say :

I eat when he goes back - if the activity happens everyday
I will eat when he go back - if I am just talking about one time/one day

I don't know but I think am learning something new now that I might have missed earlier. Because earlier I used to think that with he/she we should mandatorily use goes

Please help! Appreciated.

Again, "once" or "every day" etc have absolutely nothing to do with the verb ending of the third person singular.

It is always "he goes" in the present tense, no matter what the rest of the sentence is.
