How to use what and how in interjectional sentences?

How to use what and how in interjectional sentences?

eg.__________________ the farmer is feeding!

A What lovely sheep B How lovely sheep

I give you two examples:
a. What lovely sheep the farmer is feeding!
b. How lovely the sheep, which the farmer is feeding, is!

In my opinion, when you wanna express your exclamation, you'b better express it naturally.
e.g.
What lovely sheep! or What lovely sheep they are! I think, the determinative is not to need.

Or, You also can say:
How lovely the sheep are!

I always use this rule:
1. following "what" is a noun phrase.
2. following "how" is a adjective.
3. omit "what" and "how" and displace noun phrase or adjective to end of that sentence, and check whether it is a complete statement sentence.

Eg.
What a beautiful flower it is! It is a beautiful flower!
How beautiful the flower is! The flower is beautiful!
