"How much of that book have you read" is written the text book

but I can't understand. "book" is countable, right?

So I think "How many of that book have you read" is more correct.

Is it OK?

I would simply take it to mean 'how much text of that book' where 'text' is uncountable.

How much of that book have you read?
How many of those books have you read?

So I think "How many of that book have you read" is more correct.

Is it OK?

No, because we're talking about the quantity of one book that has been read and not the number.
