Hi

Thought affects our health far more than is generally realised. While
it is true that hereditary taints, devitalised foods, and unhealthy modes
of living play an important part, yet I believe that thought is the greatest
factor.

Does "devitalised foods" mean unhealthy foods or maybe there's some more precise definition of "devitalised" in this case?

"Devitalised foods" are processed foods which are lacking in vitamins and minerals. So, "unhealthy foods" is a fair description.

You could also say "nutritionless foods", "nutrition-free foods" or maybe "nutrient-deficient foods". You might have to explain that they have no nutritional value because they have been over-processed, not because they are like that naturally.

"Junk food" is a more familiar term to me.
