"I am" and "I'm" mean exactly the same thing. The second is a contraction of the first. Contractions like this are common in English - It is = it's; do not = don't.
It's probably premature to explain which one to choose in what circumstances until you learn what they all mean - but the contracted forms always mean the same as the long form - in any situation.

There's no difference between them. I'm is a contraction of I am. I am is used in formal writings.
I am is used in short answers.
e.g. Are you a student?
Yes, I am. NOT Yes, I'm.

Well, here's a difference. I've seen a LOT of non-natives using "I'm" as you have above.

I've never heard a native speaker use "I'm" except as a linking verb.

I'm hungry. I'm a mom.
But not:
Are you hungry? Yes, I'm.
Are you coming? Yes, I'm.
Are you a mom? Yes, I'm.
