    at night/in the evening

we work from 6 in the morning until 6 at night and we have nothing.
It's seven at night, and he hasn't eaten since the piece of toast in the morning.

These sentences are taken from the Corpus of American English. I wonder if we can use 'in the evening' instead of 'at night' without changing the meaning.

Could I ask native speakers to help me please? Many thanks.

Yes you can, in fact I prefer 'evening'.
