After the training you will be sweat and tired. Do you have some clothes to change.

    --- Is "to change" OK?

sweaty - you'll be all sweaty and tired

Use an adjective here, not a noun.

You can, but in your first example sentence it makes more sense to use "sweaty".

As a stand-alone sentence "I'm all sweat" is correct.

    I'm all ears.

subject + be + adjective-determiner + noun - Using "all" to modify a noun in this way works just fine.

He's all work and no play.

    It's all logic.

    It's all water.

    It's all seafood.

    It's all paper.

    It's all concrete.
