    I'll write it in my appointment book, but I'll use pencil in case something more important than you comes up, so I can erase it.

    Well, it's probably not that rude, but it means, Let's set a tentative date now and confirm it closer to the actual time.

    Dear edifying:

    It means, 'I'll make a note in my planner/datebook/schedule/calendar to meet with you (or have lunch, or whatever has been discussed.) There can be an implied message that since the date is being made in pencil, which can be erased, the person may cancel or change the meeting time. This can, but does not always, mean that the appointment is not of the highest importance to the person doing the penciling.
