'He goes to school'. What would be the passive form of this sentence?

There is no passive form because "go" is an intransitive verb, meaning it does not take an object. It's not possibe to "go somebody" or to "go something". It is not possible to use passive voice with verbs that never take an object, or in others words are always intransitive.

If you say, "He's gone", then "gone" is an adjective in this case, not a past participle.

Yes, you can say "They're bees". It's correct. You can use "these" and "those" as well.
