    Wouldn't it have been more sensible and helpful to explain at the outset that grammatically they are both correct, but WHY (2) is correct; and when we would use 'how'?

    Since the word in question here is "call," meaning in this case to identify by name, we would use the question word what -- "What is the name? What is it called?"

    My opinion is that #1 is completely incorrect as written. We could say, "How do we label the column...?" and it would be okay, but with "call," what is the correct choice.
