    Not a teacher.
Your two sentence are both correct but have different meaning. According to me,'I thought she'd be Jenny' means the speaker hoped that was Jenny and then he/she realised it wasn't Jenny. But in the sentence 'I thought she was Jenny', the speaker just guessed and didn't want to make sure it was Jenny.

Peter, can you suggest when you would use the sentence "I thought she would be Jenny"?

It's an unusual thing to say, and while it might be correct in the situation you have in mind, we may be able to suggest something more natural if we understood how you wanted to use it.
I'm not a teacher, but I write for a living. Please don't ask me about 2nd conditionals, but I'm a safe bet for what reads well in (American) English.
