Smile Preposition + Gerund or Participle phrase

    Dear Teacher,

Before frying the steak, I heat pan.

the phrase "frying the steak" is regarded as gerundial phrase or participle phrase ?

by the way, is it correct if I say

Frying the steak, I heat pan first.

    thanks heartily.
