    when do we say gold or golden?

    golden/gold necklace

    golden rule, golden Globe
    gold watch, gold card.

    That's right. It's a stylistic choice.
    Naturally if something is already called the "Golden Rule" or "Golden Globe" you don't change it.
    A gold ring/necklace/coin/medal.

    If something isn't made of gold, or a specifically gold colour, often golden is better - 'golden brown toast', 'The Golden Girls': but then 'The Gold Coast'.

    Use your intuition.
