I have a pain.

Are these two sentence correct?

a ..in both sentences are confusing me.

Yes, they are both correct. What do you find confusing about "a"?

are headache and pain countable or quantifiable?

Yes they are countable: "My friend gets a lot of headaches"; "After the accident she was admitted to hospital with pains in her arm, back and neck".

They are correct. Perhaps addition of some related information would make them more meaningful.

I find "I have a headache" to be a very complete thought.

I agree that "I have a pain" would benefit from additional information.

I experience a sharp pain just above my right kneecap when I put weight on that leg.
