    I see the above both sentences from "Merriam-Webster Online",

    Whether "Anything's Possible" is the abbreviation of "Anything Is Possible"?

    If it is not, the "Anything's" might be an adjective I think.

    If it is, so, what about "Mary's Apple"?

    "Anything's Possible" the apostrophe is contracting a word -> Anything is possible
    "Mary's Apple" the apostrophe is marking a genitive relationship (possessive)
