Condition: I don't know how many companions he/she was with.

What should I say?

or
2. Who were your companion last night?

Please explain. thanks.

You will have to choose which to say, but the noun either has to be singular or plural. If it is plural it requires an "s."

I assume you will ask the second question. Either way, you may get corrected by him/her. I don't know of any way to ask it without suggesting that it was a case of being either singular or plural.

Good luck!

A more natural way to ask this question is "Who did you go out with last night?"

How's about 'whom'? Is it used yet?

"Whom" still makes an appearance from time to time, but very rarely at the start of a sentence. Immediately after a preposition, "whom" does still get used.
