Curiousity of native speakers' view of plural forms

hi, the following are my questions.
Will natives mistakenly omit or add 's' to nouns when speaking? And some nouns have both countable and uncountable meanings especially for some abstract nouns, so do natives just manage to discriminate them explicitly when talking?
I am not asking the usage, I just want to know how natives think about these inflections since I want to think as natives do.
    Thank you~~

    Rarely, in my experience.

Most natives would simply talk as they learnt. They would not be aware of countable and uncountable meanings. Most natives would never have even thought about it, but still get the forms right.
