Today the visitor volume store-wide at 200 thousand was fifty thousand fewer than yesterday.

Two questions about the above line:

1----- Is 'fewer' properly used?
2----- Should we have to insert 'that of' between 'than' and 'yesterday' to make it as :
Today the visitor volume store-wide at 200 thousand was fifty thousand fewer(less) than that of yesterday.

'Fewer' is correct for people. But given that they are measuring people by 'volume', 'less' could be used. "There were fewer visitors today, but there was less volume"

2----- Should we have to insert 'that of' between 'than' and 'yesterday' to make it as :
Today the visitor volume store-wide at 200 thousand was fifty thousand fewer(less) than that of yesterday.
That is what is meant, but it can be ellipted out.
