Because /k/ is as unvoiced consonant. You can expect to hear /t/ at the end of most past participles ending like this:
/f/ coughed, /koft/
/k/ backed, /bakt/
/p/ stopped, /stopt/
/s/ passed, /past/
/x/ hoaxed. /hoakst/

If there is a schwa between the base verb and the 'd', it will be /d/:
/t/ batted, /bat'd/

it has to do with voiced and voiceless sounds. bare in mind it´s about sounds and not words.

voiceless sounds are pronounced with /t/ and voiced sounds with /d/

if you haven´t seen the rules yet let me know and I´ll send them to you
best wishes:)

Would it be incorrect to pronounce batted as /bat't/?

yes.
when you have /ed/ after /t/ or /d/ you pronounce /id/
