    memory

A: I think you will like the bacon.
B: (after tasting it) It's good cured.
C: It's all about the memory of that bacon.

What is the meaning of "memory" here in that context?

If there is anything I missed to mention, kindly ask me to provide more context "If there is any."

    Thanks a lot.

It seems that C is referring to a memory of some other bacon that B and C have eaten. What's the referent of "that" in "that bacon"? It wouldn't mean "this bacon". We also don't know the referent of "it" in "It's all about ...".
It's a strange thing to say.
