Ellipsis (. . . or ...) can be used to indicate a pause in speech, but can it also be used to indicate a pause in a sentence which is not a part of speech (a sentence with no speech/dialogue in it)?
Example: "My name is...Gary!" (correct)
Example: His name was...Gary! (is this correct too?)
Second example: "I tried to stop...but couldn't!" (correct)
Second example: He tried to stop...but couldn't. (In this sentence there are NO ommissions of words, the ellipsis is used to indicate a pause. Is it used properly in this sense?)

No, no. I'm not trying to omit words. I'm simply trying to create a pause in a NON-SPEECH sentence (a sentence with no dialogue in it). Can ellipsis function as a pause in a non-dialogue sentence?
Found my answer. The answer is yes.
