Would you be kind enough to tell me whether I am right with my interpretation of the expression in bold in the following sentences?

“I’m not in the running for any big deal,” he said. “Besides, once bitten twice shy

“You’ve been bitten more than once” Sally reminded him.

once bitten twice shy = the scalded dog fears cold water

Gee, Vil, where do you get this stuff????? ;-)

The scalded dog fears cold water because he thinks it will be scalding hot, again!
The guy dating the beautiful blonde fears a relationship with another beautiful blonde because he was rejected/hurt by the first beautiful blonde!

If 'bitten' the first time, why go through the ordeal a second time for fear of the same result?
