In your example, "that of" is a relative pronoun that refers to "career".

that refers to the weight of the animal, so the rock, etc, is five times as heavy as the animal you want to trap. Set means adjust to reach a certain level/figure, etc.

A pub landlord is not a career; being one is. So you couldn't* say 'the most common career for an ex-professional is surprisingly a pub landlord'

* I say 'you couldn't', but many people do. The second verse, for example, of the song 'If I were a carpenter', starts 'If a tinker were my trade'. Some cover versions correct this to 'If a tinker's were my trade'. (Don't worry about the inversion; it's just poetry.)
