Is this acceptable?or shall I say "hunters shoot animals"?or both of these are correct?
I believe both versions are possible. If you want to keep it sounding very 'general' then you should eliminate the article. The article tends to define, so hunters shoot the animals implies specific animals such as the animals that they are interested in or the animals that have the misfortune to cross their path or the animals that are in season etc. It is less 'generalising'. However, in this case the difference is minimal I would say.
