Dear all,
I think that this sentence is a very contradictory one. After the chef cut out the meat of the avocado.. he says:
"AT THIS VERY MOMENT, AN ENZYME CALLED PHENOLOXIDASE IS INTRODUCING ANOTHER CHEMICAL INSIDE THE FLESH, A VALUABLE ANTIOXIDANT IN THE PHENOL FAMILY TO OXYGEN. THE OXIDATION OF THE PHENOLS WILL RESULT IN A VERY RAPID BROWNING.
there is an enzyme called "phenoloxidase" that is , as far as I understand, is inside the avocado meat. That enzyme, after cutting the avocado, is now producing another chemical which is antioxidant (what is the meaninf of "in the phenol family to oxygen"?) and how it's antioxidant and then will oxidate causing the meat to brown?
