    Generally if you sharpen a skill, it's a skill you have to some extent already.
    So, if you are an aspiring linguist with some experience, you might say: "I am interested in learning English to sharpen my language skills."
    Otherwise, "I am interested in learning English to extend my current skills." or "I'm interesting in studying advanced English to sharpen my skills."
    The point is you can't sharpen something you don't even have a blunt knowledge of (metaphorically).
