Hi,

It all depends on the context.

For instance you might say, 'the factory increased production' last year', meaning it increased the volume of goods leaving the factory, whereas the word 'manufacturing' would not mean quite the same. 'Manufacturing' might imply manufacturing capacity, i.e. the ability of the factory to produce more whether it did or not.

And what about if you for instance are talking about an ongoing milling or turning of parts inside a workshop?

I'm not clear what you're asking. Your original question was about 'production and 'manufacturing'.

Milling or turning components in a workshop is a procedure in the process of producing goods.
