    meaning of Sinks

This is an extract from a manuel of a solution and the meaning of sinks as underlined is really confusing.

Sponges and diatoms can be significant nutrient sinks, and marine aquaria stocked with sponges, in particular, can benefit with the controlled addtion of a silica solution.

Please help me with what "sinks" exactly means in this case.

    Thank you
