I saw the sign
Keep an eye on your property.

Could I say
Keep eyes on your property.
(As we have a pair of eyes)

You could say, "Keep your eyes on your property".

Keep an eye on is an idiom. You use it as it is. However, I "keep your eyes on smth" doesn't seem wrong to me, but I'd rather use the idiom.
