What is "untold wisdom"? Is it the capability of the lecturers? Really hard to understand.

ex) Students who "tweet" during class might not be ignoring the lecturers' untold wisdom - they might be assessing the quality of the teaching. The micro-blogging website Twitter has turned out to be a useful way for academic institutions to gather course data as a term progresses.....

It is a way of saying that the lecturers have knowledge and experience that others do not know of.
Then, how is it related to the students' evaluating of the lecturers while they will see only what they know about the lecturers?
They will assess the lecturers based on what they actually see and hear in the lecture.

It's not related to it. The words 'ignoring the lecturers' untold wisdom' are ironic. 'Untold' collocates strongly with 'worth', 'wealth' and 'value' - those things are so rich that they are beyond the human power of estimation.... (that is, it's an exaggeration).

The contrast is between the Establishment view ('How dare they pass notes when they should have their attention avidly focused on collecting their lecturers' pearls of wisdom? They can play around with Twitter in their own time) and the view that Twitter adds to their critical experience.
