No matter how much I give to charity, my girlfriend still thinks I'm greedy.
When a subordinate conjunction consists of more than one word, are the words considered parts of speech? Or does the unit they form (no matter how) cause them to lose their individualism and become the subordinate conjunction?

"No matter how" is not a linker, sorry. "still" is. More precisely, "still" is an adverbial conjunct. It provides the link between the sub-clause and the matrix clause.
