    What does "in" mean here?
    The in is part of the phrasal verb get in.

    He could have said 'We have time to get in a good two hours of skiing. . .' meaning 'We have time for a good two hours. . . .'

    As Rover said, it's part of "get in". He means they have time to do two hours of skiing. Here are a couple more examples:

    - It's 2 o'clock. Come on, it's time to go home.
    - But I'm not ready. I'm enjoying being at the swimming pool.
    - OK, you can have 15 more minutes.
    - Great. I can get in another 10 lengths of the pool in that time.

    - I had to write four reports by 3pm today. It's only 2pm and I've finished them all. I can probably get another two in before 3pm!
