    Depends. Which Italian history are you referring to? If it's Italian history in general, you don't use 'the' (and you'd probably write, "I am impressed by Italian history", unless you are no longer impressed).
    If you read a history [book] of Italy, you would say, "I was impressed by the Italian history [book]."
