Could I use the expression "to do pizza" to mean eating pizza rather than cooking it as in "to do lunch"(=to have lunch)?

I could use it when choosing a restaurant or type of food:
A: What do you fancy?
B: Shall we do pizza?

I would not say Last night I did pizza with the meaning that I ate it. Others may see things differently.

Could I use it to mean I haven't had pizza in a while "I haven't done pizza in a while"?

You could, but without more context I would assume that that meant that you had not prepared pizza for a while.
