When we mention number of work we do in office, should we use plural or singular form?

Neither. 'Work' is not usually countable. The word 'works' usually occurs in contexts like 'road works' or 'building works'. Aspects of your work can be divided into 'jobs', 'duties', 'tasks'... and various other countable subdivisions.

You could say it like this:

My work involves:

- Maintaining attendance
- Filing paperwork
- Submitting requests to other departments.
