Past continuous tense

If I am writing a CV, is it correct to use past continuous tense as follows:

From 2011 to 2012, I was doing some part-time design jobs.

That doesn't sound appropriate to me. In CVs, we sometimes don't even use whole sentences:

2011-2012: Various part-time design jobs.

Depending on the CV and the jobs you are applying for, you might need to list those part-time jobs (location, job description, name of manager etc).

During a job interview, is it correct to say "From 2011 to 2012, I was doing some part-time design jobs." or ""From 2011 to 2012, I did some part-time design jobs." Which tenses should we use in the above context?

The past tense sounds better to me.

I prefer the past tense there too. You could also say:

I worked part-time in several different design jobs in 2011 and 2012.

Sometimes, I worked part-time, and sometimes, I worked on temporary basis. In this case, which of the following sentences is correct?

1. I worked part-time or temporay design jobs in 2011 and 2012.
2. I worked part-time and temporay design jobs in 2011 and 2012.

Please note that I do not know how to put the "temporay" in your excellent example.
