Is correct to put a plural noun after amounts of?

Also, is there any difference '(large) amounts of' and 'a (large) amount of' ?

Yes, the plural is correct. It suggests that they take in different chemicals, not just the one sort.
"Lilac takes in large amounts of a toxic chemical" means there's a single chemical that they take in large amounts (in a large amount).
"Lilac takes in large amounts of toxic chemical" doesn't work for me.
