What do you call this kind of restaurants?

Hi.

There are some restaurants that you pay a fixed fee/money at entrance and then you are free to have everything as much as you like! Literally translated, we call them "open-menu restaurants". What do people call it in UK and US?

I've seen them called 'buffet restaurants' or 'All You Can Eat ['AYCE'] restaurants'.

Definitely my vote goes for a buffet.

Sincerely I need to start avoiding them! Some of them have even cookies, jellies and other sweets in their menu. I've gained much weight recently because of them ! :( ... but it was probably worth it anyway :)

The trouble with buffet is that it can mean another sort of presentation of a range of foodstuffs in a public place - though with no payment required.

I would use "All You Can Eat" too. Buffets are available at a variety of restaurants, not only ones where you pay in advance and go up as many times as you like. Sometimes, the buffet is just one of the choices on the menu along with plenty of other dishes cooked to order.

There are also some "family style" restaurants near here. Food comes on platters and you share with the others at your table. You pay a set amount, and they will refill the platters as many times as you ask.
