2. All I did was use use beef and anchovies instead of chicken.

3. All I had to do was use beef and anchovies instead of chicken.


1 and 2 are correct and I wonder whether 'to' can be omitted like sentence 2.

"All I had did" is not correct.

PS: Why would you use anchovies on anything? ;-)

1 and 3 are correct. You can either use to or omit it.

2 is not correct, as Charlie said.

P.S.: To make traditional Korean dishes we sometimes add anchovies.
