    big-shot filmmaker

As far as I know, "big shot" is an important figure in some field. Does this mean the same thing? If so, why was "-" inserted?
fed)Narrated, written, and directed by Zacchary,,,,,He said that he wants to be a "big-shot filmmaker" when he grows up.

Did you mean "Why was "-" inserted?"? If so, it was because it was part of a direct quote. If he said "I want to be a big-shot filmmaker when I grow up", the piece has only incorporated the words "big-shot filmmaker" as the actual quote.
Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.
