What is the difference in usage between "riding a bike" and "go cycling" ?

No difference.
I think there is.

If I ride a bike, I am using the bike as a means of transport.

If I go cycling, I am engaging in a leisure activity.

For me, "riding a bike" can also be used for a leisure activity. I agree that "go cycling" would not fit well with transportation.
