Which does dating back more than 7000 years describe? "Middle East" or "pottery jars"? It it is "Middle East", it seem to be against restrictive usage of a participle.
2)What we can expect to find now is earthenware jars or vessels bearing evidence that they might have held wine. Evidence of this kind has been found in pottery jars in the Middle East dating back more than 7000 years....

If it refers to Middle East, it could mean "Middle East of 7000 years ago", but that was not my first feeling.
In the Middle East, pottery jars have been found which are over 7000 years old. The age refers to the pottery jars.
Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.
