The first one is possible. If you have meetings every day, as part of your job, for example, and each time those meetings are attended by new people. Otherwise, the second one is more natural.

When it comes to how verbs, prepositions and phrasal verbs are used, there are rarely 'rules'. Native speakers of different varieties of English use different prepositions (or no preposition), and speakers of the same variety but different ages may not agree on usage.

I, a 67-year-old male speaker of standard (but slightly dated) Southern British English, never use 'with' when I meet people, whatever the circumstances.

It is incorrect to capitalise 'day' in this context.

A better title would have been I meet (with) new people.

This is not about grammar. Both sentences are grammatical. The issue here is meaning.

For me, "meet new people" means to make their acquaintance. Every time I go to a bar, I meet new people.
Again, for me, "meet with new people" means more than just meeting them for the first time. It implies a substantive conversation, often in a business setting. When I travel on business, I meet with new people every day.
